Fagioli di Sarconi - Ciuoto

The name of this bean variety derives from the name given to the sarconesi who have always been bean farmers. This ecotype has a shape of ovoid seed, with cream-white background and red streaks, slightly smaller in size than greenish and cooking times of around 45 minutes. The average weight of a thousand dry seeds is around 480 gr.

he farm produces varieties of beans (phaseolus vulgaris L.), of ancient Lucan origin, in Sarconi promoted by the European Community to indicate the typicality of these precious legumes, cultivated in this geographical area, with the I.G.P. (Protected Geographical Indication). Ciuoti, tabacchini, verdolini, munachedde, tuvagliedde, nasieddi, white rice are thus indicated the Sarconi beans grown in their agro-climatic environment of origin that made them more rustic and therefore more resistant to degenerative bean diseases even without the use of chemical pesticides and pesticides, always harmful to the soil’s natural humus and consumer health.

These beans are grown and produced as they used to be: in the same red earth irrigated with the water of the Maglie river, collecting the mature and leathery pods from the plant, then beaten and shelled by hand and finally, for a complete drying the seeds are exposed in the sunshine of the hague. Beans rich in proteins, fiber, mineral elements and vitamins are essential food for a healthy diet: they are cooked "a prima acqua" and are good, tasty and easy to digest.
